Fill your boat with Eastern promise!

On a sailing trip in Turkey a couple of years ago, we stumbled across a restaurant in Kapi Creek near Fethiye serving the traditional Turkish breakfast Menemen. Always up for something new, my husband and I decided to try it, we have been huge fans ever since! This breakfast is extremely filling and I'm sure that cold hungry crews would love it! This is the recipe that I use, but there are many variations on this theme including one with scrambled eggs.

Ingredients for 4 portions:

2 white onions (finely chopped)
1 red or green pepper (finely chopped)
1 tin of tasty tinned chopped tomatoes or 6 large fresh tomatoes skinned and chopped
1/2 teaspoon of hot chilli powder (vary to taste) or finely chopped slender chillis (to taste)
Salt and Pepper to taste
8 eggs

Method:

Finely chop the onion, pepper and stir fry in olive oil for 10 mins or until the onion and peppers are soft but not burnt.

Add the tin of tomatoes (or fresh skinned and chopped tomatoes if you prefer) and chilli powder (or fresh chilli) to taste and continue to fry for a further 5/10 minutes, season to taste.

Pour he sauce in equal portions into 4 baking dishes which should be small enough for all 4 to fit in your galley stove.

Crack 2 eggs on top of the sauce of each portion and pop back in the oven. Time to cook will depend on your oven but usually approx 10 mins and depending how you like your egg.

Either keep in the baking dish for less washing up or serve on a plate.

Serve with a slice of your favourite bread.
